The Last Chance Ranch, Inc was founded by Leroy Greenwood, ancestor of Lt Austin Greenwood in 1840 in the state of Texas. Starting out with a single ranch, within ten years it had grown to include five ranches. During the War Between the States, Leroy started the tradition of the oldest son inheriting it when he marries. Thus, his son, Lee, inherited it a year later. Over the next hundred years, it grew from five ranches to fifty, supplying much of the meat needed for the second world war on Earth. However, as with most businesses, the Last Chance Ranch was dissolved after the third world war. The Greenwoods were still better off than most people as the main ranch was located in a town called Lobo, Texas, which was a farming community that had everything from corn and potatoes to tomatoes and peas to beef and pork.

When the Vulcans came to Earth and the people began to put their differences aside, the ranch began to flourish again. This time, there was no money. Only the joy of ranching. The Greenwoods purchased several Capellan cows, and mixed them with Angus and Longhorns, thus the Last Chance cattle was born. They were bred to have a unique flavor and soon Klingons and Romulans were purchasing the meat with something called latinum. John Greenwood knew this was probably a good investment, so they began to breed in earnest, creating over 5,000 ranches across the Federation and its colonies over the next two hundred years, and creating quite the nest egg for the Greenwoods. They are constantly trying to breed more cows in order to keep up with demand.
